Here’s how to secure a seat at Björn Frantzén’s new Dubai restaurant

FZN Dubai, the highly anticipated fine dining concept from Chef Björn Frantzén, is set to open soon at Atlantis, The Palm. Inspired by the culinary mastery of its Michelin-starred counterparts, Frantzén in Stockholm and Zén in Singapore, the concept is designed to offer an intimate and immersive dining experience. It draws from the signature styles of Chef Björn Frantzén’s renowned establishments, promising a memorable meal for its guests.

The restaurant, part of a larger culinary complex that includes Studio Frantzén, evokes the feeling of being in a sophisticated living room. It will boast a rooftop orangery and views of the Dubai skyline. The restaurant will be an exclusive experience, as it can only accommodate 25 people.

What’s on the menu at FZN Dubai?

The menu at FZN Dubai showcases a blend of modern European fine dining and Japanese influences, creating a curated, unexpected, and truly exceptional gastronomic journey. Much like its sister restaurants, FZN is rooted in seasonal and sustainable produce, ensuring a fresh and dynamic menu. Dishes could range from Crudo of scallop with salted Tokyo turnip to king crab grilled over birch embers with hot sauce. Plus, there will be an extensive selection of wines and Grand Cru’s – we’re talking about more than 1,500 labels.

Who is Björn Frantzén?

Chef Björn Frantzén brings his remarkable culinary vision to UAE with the launch of FZN Dubai. Known for his meticulously designed dining experiences, Frantzén is one of the select few chefs worldwide to operate two restaurants, each holding three Michelin stars.

Born in Sweden, Frantzén’s career began in traditional kitchens before he refined his skills at top Michelin-starred European restaurants, including working under culinary icons such as Alain Passard and Joël Robuchon. His style is renowned for blending Nordic simplicity with bold, modern techniques and Japanese influences, creating a dining experience grounded in tradition and highly experimental.

Frantzén’s flagship restaurant in Stockholm, Frantzén, earned its third Michelin star in 2018, making him the first Swedish chef to receive such an accolade, while Zén in Singapore also holds three Michelin Stars.

How to make a reservation at FZN Dubai?

Reservations for FZN Dubai will open on Tuesday, 1 October at 10am Gulf Standard Time. Seats are limited, and bookings are released monthly for the following month.
